Peanut Butter Cookies

Ingredients

1 3/4 cups flour

1 1/4 cups firmly packed brown sugar

3/4 cup peanut butter

1/2 cup shortening

3 tablespoons milk

1 tablespoon vanilla

1 egg

3/4 teaspoon salt

3/4 teaspoon baking soda


Directions

  1. Preheat oven to 375 degrees F.

  2. Combine brown sugar, peanut butter, shortening, milk, and vanilla in mixing bowl; mix until well blended (2 minutes).

  3. Add egg; mix another 2 minutes.

  4. Combine flour, salt, and baking soda in separate bowl.

  5. Add flour mixture slowly at low speed.

  6. Drop onto ungreased cookie sheet approximately 2 inches apart.

  7. Flatten slightly in criss-cross pattern with tines of fork.

  8. Bake until set and just starting to brown (approximately 7 minutes). Do not over-bake.
