Chili Con Carne

Ingredients

1.5 lbs. Ground Beef
1.5 lbs. Ground Pork
6 Tablespoons Bacon Grease
1 Onion, minced
4 Cloves Garlic, minced
4 Tablespoons Chili Powder
1 Tablespoon Cumin Powder
1 Tablespoon Flour
1 Large Can Tomato Sauce 2 Bay Leaves
1 Teaspoon Salt
1 Tablespoon Oregano
1 Tablespoon Vinegar
1 Large Can Kidney Beans
1 Large Can Great Northern White Beans
1 Large Can Pinto Beans


Directions

In a large skillet, heat 6 tablespoons bacon grease, add onion and garlic; cook until onions are tender but not brown. Remove from heat.

In a large pot, heat 6 tablespoons bacon grease. Mix in chili powder and flour; stir until mixture is smooth.

Add meat and stir until brown.

Add onion and garlic mixture.

Add all remaining ingredients except beans. Simmer 30 minutes.

Add beans and simmer 2 hours. Add liquid as necessary to achieve desired thickness.

Remove bay leaves and serve.
