| Au Gratin
Potatoes

Ingredients
6 medium russett potatoes (2-3 pounds)
1/4 cup butter
1/4 cup flour
1 teaspoon salt
1/4 teaspoon pepper
3 cups milk
4 cups (16 oz.) sharp cheddar cheese (shredded)
1/4 cup bread crumbs

Directions
- Preheat oven to 375 F.
- Scrub potatoes, but do not peel.
- Slice potatoes into 1/8 inch thick pieces.
- Melt butter in saucepan over medium
heat.
- Stir in flour, salt, and pepper.
- Cook, stirring constantly, until bubbly;
about two minutes.
- Stir in milk and 2 1/2 cups cheese.
- Stir constantly until all the cheese
is melted and the sauce thickens; remove from heat.
- Layer potatoes and cheese sauce in 1
1/2 quart casserole dish.
- Bake one hour uncovered.
- Mix remaining cheese and bread crumbs
and sprinkle over potatoes.
- Bake 15 - 20
minutes longer or until top is brown and bubbly.
