Au Gratin Potatoes

Ingredients

6 medium russett potatoes (2-3 pounds)
1/4 cup butter
1/4 cup flour
1 teaspoon salt
1/4 teaspoon pepper
3 cups milk
4 cups (16 oz.) sharp cheddar cheese (shredded)
1/4 cup bread crumbs


Directions

  1. Preheat oven to 375 F.

  2. Scrub potatoes, but do not peel.

  3. Slice potatoes into 1/8 inch thick pieces.

  4. Melt butter in saucepan over medium heat.

  5. Stir in flour, salt, and pepper.

  6. Cook, stirring constantly, until bubbly; about two minutes.

  7. Stir in milk and 2 1/2 cups cheese.

  8. Stir constantly until all the cheese is melted and the sauce thickens; remove from heat.

  9. Layer potatoes and cheese sauce in 1 1/2 quart casserole dish.

  10. Bake one hour uncovered.

  11. Mix remaining cheese and bread crumbs and sprinkle over potatoes.

  12. Bake 15 - 20 minutes longer or until top is brown and bubbly.
